Recipe ingredients and directions:

 

1 lb ground turkey

1 small onion, chopped

½ tsp turkey seasoning mix

enchilada sauce

1-1/2 cups grated cheddar cheese

2-1/4 oz can sliced ripe olives, drained

4 oz can diced green chilies

 

Seasoning mix:

1 tbs nutmeg

1 tbs thyme

1 tbs garlic powder

1 tbs sage

 

Use frozen tortillas thawed only enough so they can be separated without breaking.  Brown ground turkey, onion and seasoning mix in a frying pan.  Layer alternately in a 2 quart casserole dish beginning and ending with sauce:  2 cups enchilada sauce, 6 tortillas, cheese, olives and chilies.  Freeze casserole immediately – or bake at 350˚ for 30 minutes.  Note:  If you freeze for later use (this works well) casserole must be thawed completely before baking.
