Mandarin Shrimp Crepes:

½ lb small uncooked shelled shrimp

2 tbs cook oil

2 tbs sliced green onion

½ tsp ground ginger

1 clove garlic minced

2 cups Chinese pea pods

10 crepes

 

Sauce:

2 tbs cornstarch

1 tbs sugar

1 cup chicken broth

1 tbs lemon juice

2 tbs soy sauce

1 can 11 oz Mandarin oranges, drained

 

In a large skillet sauté shrimp in oil for several minutes.  Add onions, ginger, garlic, and pea pods.  Toss and cook at medium high heat for 1-2 minutes.  Fill cooked crepes with mixture.  Roll or fold and arrange in baking dish.

 

In sauce pan combine corn starch with sugar.  Stir in broth, lemon juice, and soy sauce,.  Cook over low heat, stir constantly, until thickened and clear.  Add drained Mandarin oranges.  Spoon over crepes.  Heat in 350˚ F (177˚ C) oven for 10-15 minutes.
