Recipe ingredients and directions:

 

1 cup dried garbanzo beans (Winco has them)

water

3 green onions

½ cup packed parsley sprigs

4 garlic cloves

1 egg

1 tsp ground cumin

½ tsp baking soda

salt and pepper to taste

oil for frying

sesame seeds, if desired

 

Soak Beans in water (to cover) overnight.  Drain.  Place beans in food processor, add green onion, parsley, garlic, egg, cumin, baking soda, salt and pepper.  Process until almost smooth, let stand 15 minutes.  Refrigerate to chill.  Heat 1 inch deep oil in large skillet to 370˚ F (hot).  Moisten hands and pinch off pieces of mixture 3/4” diameter or use spoon, then shape by hand into small balls.  You can use wet  melon-ball scoop, or make patties with one tablespoon each.  Sprinkle with sesame seeds, if desired.  Fry in hot oil until browned on all sides.  Serve warm.   They go good with Tahini and pita bread.

Recipe anecdote:    Mom was so excited to finally get this recipe right, after a few trials that she forgot to heat the oil enough.  She noticed something is wrong when the balls spread into hundreds of pieces.  There goes one more try.  (So heat oil enough before frying.)
