1 medium yellow onion,
finely chopped
¼ cup cooking oil
2 cloves garlic crushed
¼ cup pine nuts
1 tsp black pepper
1 tsp salt
5-6 medium potatoes, cooked,
peeled and mashed
½ to ¾ cup milk for mashing
potatoes
½ cup bread crumbs
Pam spray
1 lb ground beef
In a saucepan, sauté onions
with oil until tender. Add garlic and
sauté a little longer. Then add pine
nuts and cook for a few minutes. Add
the ground beef with salt and pepper and cook until meat is done. Set aside.
This mixture is to be used as a stuffing in between the potato
layers. Cook, peel and mash potatoes in
a big bowl, adding some milk to make it manageable by hand. In a 13x9 pan sprayed with Pam, add the
bread crumbs to the bottom to cover it.
Spread half the potato mix over the bread crumbs and smooth with hand. Then add all the meat mixture over the
potatoes. Now spread another layer of
potatoes over the meat to cover it completely.
Sprinkle the remaining bread crumbs to cover the whole pan. Spray the surface with Pam and make a whole
with your finger in the middle of the pan for venting. Bake at 350° for 45 minutes or until golden brown. Enjoy!
