Recipe ingredients and directions:

 

4 x 10 inch zucchini, cut in chunks (or enough to half fill a 5 qt stock pot)

Water to cover

3 cubes chicken boullion

2-3 wedges Laughing Cow (La vache qui rit) cheese

½ tsp of salt or to taste

Garnish with sprigs of fresh oregano or basil

 

Fill 5-quart stockpot approximately half full with zucchini chunks.  Add water just to cover.  Add chicken boullion cubes.  Bring to boil.  Reduce to simmer stirring occasionally for 30 minutes or until zucchini is completely tender.  Remove from heat.  Add 2 wedges (or more to taste) of Laughing Cow cheese and stir to melt.  Use stick blender to puree the soup.  Add salt to taste.  Garnish and serve immediately.  To round out the meal serve with crunchy French bread, sliced garden tomatoes drizzled with olive oil and balsamic, and wedges of French Charentais melon (or cantaloup) draped with prosciutto slices.  Bon Appétit!
