Recipe ingredients and directions:

 

1 2-1/4 lb rolled, boned pork loin roast

½ cup apricot jam

1 tbs Dijon mustard

1 tsp thyme

cooking spray

 

Preheat oven 325˚.  Unroll roast, trim fat.  Combine jam, mustard and thyme in a bowl.  Brush over roast.  Insert meat thermometer into thickest portion of roast.  Bake at 325˚ for 1 hour 45 minutes or until thermometer registers 160˚.  Baste more mixture.  Let stand 15 minutes before slicing.  Bring remaining apricot mixture to a boil, reduce heat and cook 2 minutes.  Serve glaze with roast.
