2 cups cake flour
1 tsp baking soda
½ tsp ground cinnamon
¼ tsp ground nutmeg
½ tsp salt
2 eggs, separated
2 cups buttermilk
1 tsp vanilla
¼ cup butter, melted
Combine flour, baking soda,
cinnamon, nutmeg and salt; set aside.
Combine egg yolks, buttermilk and butter; add to flour mixture, stirring
briskly until blended.
Beat egg whites in an electric
mixer until stiff peaks form. Carefully
fold into the batter. Bake in preheated
waffle iron. Serve with real maple
syrup and fresh berries.

Recipe anecdote: This is hands-down our favorite waffle recipe. We’ve tweaked every waffle recipe we’ve ever
read and finally came up with our own.
The cake flour and buttermilk makes these waffles incredibly light and
fluffy. With two small children who
wake up early on the weekends, we’ve usually eaten breakfast before most “cute”
breakfast places have opened their doors.
As we’re off to our weekend activities with full bellies, we chuckle at
the folks lined up for brunch at the neighborhood breakfast spots.
