Recipe ingredients and directions:

 

1-1/2 dozen                mushrooms

2 oz                             bleu cheese

¼ cup                          green onions, finely chopped

1/3 cup                       plain bread crumbs

¼ cup                          unsalted butter

                                    salt and pepper to taste

 

Wash and dry mushrooms.  Remove stems.  Finely chop stems and green onion.  Sauté stems and green onion in butter.  Add crumbled bleu cheese, bread crumbs, and salt and pepper.  Remove from heat and mix well.  Stuff each mushroom cap with mixture and arrange in baking dish.  Bake in 350˚ oven for approximately 18 minutes.
