Recipe ingredients and directions:

 

˝ cup              shortening

1 cup               sugar

2                      eggs, separated

1/3 cup           milk

1-1/2 cups      flour

1 tsp                baking powder

˝ tsp               salt

1 tsp                vanilla

1-1/2 cups      floured blueberries (take 2 tbs of the 1-1/2 cups of flour and

                        roll the blueberries in it.  Set aside.)

 

Beat egg whites until stiff peaks form when beaters are raised in the bowl.  Set aside.  Cream shortening, sugar then add 2 beaten egg yolks and vanilla.  Add dry ingredients-flour, baking powder and salt with creamed mixture and 1/3 cup of milk.  Spoon into lightly greased muffin tin.  Bake at 350˚ for 25 minutes.

 

Recipe source and anecdote:    I got this recipe from a house mate before I was married and it has always been one of my favorite muffin recipes.  My house mate was a college exchange student on a work term from Nova Scotia.  Blueberries grew in abundance right out her back door at home.  She told me the recipe was her mother’s and was best with “low bush berries”.  I make it with wild berries when I can get them.  It certainly is fine with any berries and I have made it with cranberries too.
