Recipe ingredients and directions:

 

1                      large bunch broccoli cut into pieces and washed (4-5 cups)

1 cup               raisins

¼ cup              red onion

1 cup               sunflower seeds (shelled)

10 strips         bacon fried and crumbled

3-4 tbs            sugar

2 cups             mayonnaise (you can use light mayonnaise or substitute

                        creaming salad dressing)

1 tbs                vinegar

 

Put washed, well-drained broccoli pieces in large glass bowl (can be serving bowl if desired).  Add raisins, onion, bacon, and sunflower seeds.

 

Mix together sugar, mayonnaise and vinegar and pour over salad.

 

Chill.

 

This is a great cold salad for the summer months, especially with all of the farmer’s markets and fresh ingredients!  Pare it with barbeque chicken and you’re set.

Recipe anecdote:    We were married in a small town, where the various “ladies of the church” make the salads.  Someone made this for us, but unfortunately used unshelled sunflower seeds.  My maid of honor ALWAYS asks if I’m going to make SUNFLOWER Broccoli when she comes to visit…
