Recipe ingredients and directions:

 

2-3/4 cup        sugar (reserve ¼ cup)

¾ cup              corn syrup

¼ cup water

2 tsp                vanilla

2                      egg whites

1 cup               nuts, walnuts or pecans are best

 

Boil 2-1/2 cups sugar with corn syrup and water.  Boil until mixture spins a long thread.  (Using a candy thermometer it will read Hard Boil.)

 

Beat 2 egg whites and vanilla until stiff.  GRADUALLY add 1/4 cup sugar to the egg whites.  The GRADUALLY add the syrup, sugar, and water boiled mixture.  [It is helpful if you have an automatic mixer (not hand held) to use that with the egg whites so you can add the sugar and syrup.  Or else have a cooking buddy beat while you add sugar.]  Beat until mixture stands in a peak.

 

Drop by teaspoon onto wax paper to make individual candies.

 

VARIATIONS:  You can use food coloring to make the candies pink, green, blue, etc.  Also instead of vanilla you can use other flavorings such as almond, chocolate or peppermint.

 

Hint:  This recipe tends to turn out better if you can make it in lower humidity.

Recipe anecdote:    She made it every “holiday”, Christmas, Easter, Thanksgiving and for parties.  It has always been a “family staple” and was probably the most often requested recipe from my friends, because it tends to be one that “everyone’s grandmother made”.
