Recipe ingredients and directions:

 

1-3/4 cup        sugar

1-1/4 cup        oil

4                      eggs

2 cups             flour

2 tsp                baking powder

2 tsp                baking soda

2 tsp                cinnamon

1 tsp                salt

3 cups             shredded carrots

1 cup               chopped walnuts

 

Preheat oven to 350 degrees.  Butter and flour three 9” round cake pans.  Mix together sugar, oil and eggs.  Mix together flour, baking powder, baking soda, cinnamon, and salt, then add to sugar mixture.  Add carrots and walnuts to cake mixture.  Bake in 350˚ oven for 30-35 minutes.

 

Icing

20 oz. canned, crushed pineapple, well drained

½ stick            butter

8 oz                 cream cheese

2 tsp                vanilla

1 box               powdered sugar

 

Blend butter, cream cheese, vanilla and powdered sugar together.  Frost each layer of cake with frosting, then add a layer of pineapple.  Continue with another alyer of cake, frosting  and pineapple.  Top with the third layer of cake and remaining frosting.

Recipe anecdote:    I substitute for the oil: ¾ cup oil and 1 baby food prunes.
