Recipe ingredients and directions:

 

2 cups             uncooked orzo

1 tbs                olive oil

2 cloves          garlic, minced

¼ lb                 goat cheese (chevre or montrachet)

1 cup               chicken broth

¼ cup              chopped sundried tomatoes (oil packed)

1 bunch           fresh basil leaves, rinsed and thinly sliced

                        salt and pepper

 

Prepare orzo in boiling water, rinse, drain, and set aside.

 

Heat oil in large fry pan over medium heat, add garlic and cook for one minute.  Add ½ cup of chicken broth.  Add half of the goat cheese and stir until melted.  Add cooked orzo and remaining chicken broth and stir.  Add sundried tomatoes.  Add salt and pepper to taste.  Remove from heat.  Add remaining goat cheese and basil leaves.  Stir well.  Serve right away.  I often serve this with BBQ steak or chicken.
