1                      large onion, sliced

2 cups             chicken broth

1 lb                  zucchini, cubed

3 tbs                cream cheese

1 tsp                curry powder

2 tbs                olive oil

 

Sauté onion in olive oil until golden and set aside.  Combine chicken broth and zucchini, boil until zucchini is tender.  Add onions.  Cool slightly.  Liquify soup in a blender, adding cream cheese and curry powder.  Serve immediately.

Recipe anecdote:   My dad is one of the best cooks I know.  He came across this recipe during his travels and called to share it with me.  It’s so easy to make, especially during “garden” season when zucchini is plentiful.  The cream cheese and curry powder add a pleasant and surprisingly mild twist to the flavor.
