Recipe ingredients and directions:
1 large onion, sliced
2 cups chicken broth
1 lb zucchini, cubed
3 tbs cream cheese
1 tsp curry powder
2 tbs olive oil
Sauté onion in olive oil
until golden and set aside. Combine
chicken broth and zucchini, boil until zucchini is tender. Add onions.
Cool slightly. Liquify soup in a
blender, adding cream cheese and curry powder.
Serve immediately.
