½ cup              chopped walnuts

2 tsp                ground cinnamon

½ cup              sugar

Beat together until light and fluffy

 

 
1/2 cup            butter

1 cup               sugar

2                      eggs

1 tsp                vanilla

Mix together

 
2 cups             flour

1 tsp                baking powder

½ tsp               salt

1 tsp                baking soda

 

1 cup               sour cream

2                      medium apples, peeled, cored, thinly sliced

 

Grease a 9 inch angel food pan and preheat oven to 375˚ F.

 

Beat butter until creamy.  Add sugar, beating until light and fluffy.  Add eggs and vanilla, beat until blended.  Slowly add flour, baking powder, salt, baking soda and sour cream.

 

Spread ½ the batter in angel food pan.  Top it with sliced apples (peeled and cored).  Top it with ½ the walnut/sugar mixture.  Add rest of batter to pan.  Top it with remaining walnut/sugar mixture.

 

Cook 40 minutes, or until toothpick comes out clean.  Let stand 30 minutes after baking.  Using knife, loosen sides of cake from pan.  Lift cake (still on base) and cook completely.  Using a spatula, loosen cake from tube and base, lift it to a plate.

Recipe anecdote:   My mom has been making this coffee cake ever since I can remember.  It’s sweet, dense, moist and very satisfying.  Mom usually makes 1-1/2 recipes and cooks it for 60 minutes.
