Recipe ingredients and directions:

 

3-1/4 cup                     flour

¼ tsp                           baking soda

¼ tsp                           salt

2-1/4 sticks                 unsalted butter

8 oz                             cream cheese

3-3/4 cups                   sugar

1 tsp                            vanilla extract

3 tbs + ¼ cup              fresh lime juice

2 tsp                            finely grated lime zest

6                                  eggs

 

Have all ingredients at room temperature.

Preheat oven to 325˚.

Grease and flour bundt cake pan.

Sift together flour, baking soda and salt.  Set aside.

Using an electric mixer with a flat beater, beat butter and cream cheese at medium speed until smooth and creamy (30-40 sec).

Add 3 cups sugar and beat until light and fluffy (about 5 min).

Add eggs one at a time, beating well after each.

Beat in vanilla and 3 tbs lime juice.

Reduce speed to low.  Fold in flour mixture in 3 additions.

Fold in lime zest.

Spoon batter into prepared pan.  Make sides higher than center.

Bake about 1-1/2 hours-until golden and toothpick inserted in center comes out clean.

Cool upright in pan 10 min.

In a small bowl whisk ¼ cup lime juice and ¾ cup sugar until blended.

Invert cake over a rack and set over a sheet of wax paper.

Generously brush cake with glaze.

Cook completely before serving.

Recipe anecdote:   This pound cake is just like “Bábovka” which is a favorite Czech dessert.  It’s very easy to make and to bring to pot lucks.  The kids love it and adults are always asking for the recipe.
