Preheat oven to 350 degrees.

 

Pear Mixture:

1 cup               granulated sugar

2 tbs                all-purpose flour

2 cups             sliced pears (Barlett, Packum; about 4 medium)

½ tsp               ground cinnamon

dash                salt

 

In a small bow, mix together granulated sugar, flour, sliced pears, cinnamon and salt.   Spread in a greased 9” x 9” baking pan.

 

Topping:

1/3 cup            old-fashioned or quick oatmeal, uncooked

1/3 cup            firmly packed brown sugar

1 cup               all-purpose flour

1/3 tsp             baking soda

1/3 tsp             baking powder

4 tbs                butter-DO NOT SUBSTITUTE

 

Mix oatmeal, brown sugar, flour, baking soda and baking powder together.  Add the butter and work in until the mixture is like coarse crumbs.

 

Spread the mixture over the pears and pat firmly, covering all the pears.  Bake about 40 minutes.

 

Cream or French Vanilla Ice Cream (OPTIONAL)

Recipe anecdote:    This is a very simple and easy dessert recipe, don’t be thrown off by all the ingredients.  When shopping for the pears, they need to be quite firm, not soft.  My family likes to have this served with a scoop of French Vanilla Ice Cream on top.  It is a very light yet satisfying summer dessert.
