Recipe name and category:        Buttermilk Biscuits

No. of servings:                  6-12

Preparation time:

Recipe ingredients and directions:

2 cups            flour

4 tsp                baking powder

¼ tsp               baking soda

¾ tsp               salt

2 tbs                butter

2 tbs                shortening

1 cup               chilled buttermilk

In a large mixing bowl, combine all dry ingredients.  Using your fingertips rub butter and shortening into dry ingredients until mixture looks like crumbs.  Make a well in the center and pour in the chilled buttermilk.  Stir just until the dough comes together.  The dough will be very sticky.

Turn the dough onto a floured surface and gently knead about 5-6 times.  Press into a 1-inch thick round.  Cut out biscuits with a 2-inch cutter.  Place biscuits on baking sheet so that they TOUCH.

Bake until biscuits are tall and light gold on top…approximately 15-20 minutes.

Recipe anecdote:    My family likes really thick biscuits so I just squeeze the dough into a thicker round and cut out about 5-6 biscuits from that.  These biscuits are great on a wintry night with butter and honey.  I have also fixed them for brunch.
