12 large green,
orange and red bell peppers (more green than others)
6 large ripe
tomatoes
3/4 cup virgin olive oil
salt and pepper to taste
Roast peppers under a
broiler until completely blackened.
Remove and place in a paper
bag for 5-10 minutes. Remove peppers
from bag and allow to cool until you are able to handle them. Remove skins from peppers.
Follow the same procedure
for the tomatoes (it takes less time to roast tomatoes, keep an eye on
them). Roughly chop the peppers and
tomatoes and put them in a bowl. Add
olive oil Season with salt and pepper.
.Serve with meat, chicken,
pasta or alone with crusty bread and cheese.
Recipe source and anecdote: This is a
traditional Sicilian recipe which I leaned from my father, who learned it from
his father, who was the cook for a wealthy Baron in Syracuse, Sicily.
