2 cans black beans, rinsed and drained
½ cup red onion, finely chopped
2 cloves large garlic, finely chopped
14 oz chopped black olives
¼ cup olive oil
¼ cup red wine vinegar
½ tsp salt
½ tsp ground cumin
¼ tsp cayenne
¼ cup finely crumbled feta cheese
¼ cup chopped cilantro
tortilla chips
Mix black beans, onion,
garlic, black olives, oil, vinegar, salt, cumin, and cayenne together. Cover and chill. Spoon mixture evenly onto serving plate. Sprinkle with feta and cilantro and serve with
tortilla chips.
