4 Belgium endive
1 tbs mayonnaise
½ cup chopped celery
¾ cup toasted, chopped walnuts
¾ cup parmesan cheese, chopped finely
2 tbs fresh lemon juice
1 tbs olive oil

Blend olive oil, lemon
juice, and mayonnaise in a large bowl.

Finely chop walnuts,
celery and parmesan cheese. Add to
bowl. Mix well.

Carefully remove leaves
from endive, cutting base as needed.

Spoon cheese mixture
into endive “cups” and arrange on platter.
