4                      Belgium endive

1 tbs                mayonnaise

½ cup              chopped celery

¾ cup              toasted, chopped walnuts

¾ cup              parmesan cheese, chopped finely

2 tbs                fresh lemon juice

1 tbs                olive oil

 

1                    Blend olive oil, lemon juice, and  mayonnaise in a large bowl.

2                    Finely chop walnuts, celery and parmesan cheese.  Add to bowl.  Mix well.

3                    Carefully remove leaves from endive, cutting base as needed.

4                    Spoon cheese mixture into endive “cups” and arrange on platter.  (Drawing of this dish is on the recipe card submitted.)
