Recipe ingredients and directions:

 

4 chicken legs

4 chicken thighs

2 bell peppers, cut in strips

2 lb bag of small potatoes, halved

1 red onion, cut in eighths

1 head of garlic, broken up but paper left on

˝ cup, or more, olive oil

1 tsp thyme

salt and pepper to taste

 

Preheat oven to 375˚.  Drizzle a little olive oil in a heavy roasting pan.  Place all of the ingredients in the pan, pour olive oil over the contents, sprinkle evenly with salt, pepper and thyme.  Bake for about one hour, without stirring, until chicken is done and potatoes have a golden color.

 

Variations:

Chicken breast can be substituted for picky white meat eaters.  “Skin on” is recommended to enhance the overall flavor and juices of this dish.

Cook’s choice of seasoning can be used – lemon pepper seasoning, creole seasoning would be delicious variations.

 

Garlic lovers’ bonus:

The paper (skin) is left on the garlic so that the garlic doesn’t burn.  After baking, garlic lovers can gently squeeze each clove of “garlic jam” out of its paper.  Tastes great smeared on a piece of potato.
