3 cups milk

1-1/4 cups superfine sugar

1 vanilla bean, split lengthwise

2/3 cups all-purpose flour

5 large eggs

3 poached pears, diced

confectioner’s sugar, for dusting

 

Preheat oven to 400˚.

 

In a heavy medium saucepan, combine the milk, sugar and vanilla bean.  Bring to a boil, stirring to dissolve the sugar.  Reduce heat to low and simmer for 2-3 minutes.  Remove from heat and allow to cool to lukewarm.

 

Measure the flour into a large mixing bowl.  With an electric mixer on medium speed, add the eggs one at a time, blending down after each addition and scraping down the sides of the bowl frequently.  The batter should be smooth and lump-free.  Remove the vanilla bean from the milk mixture (and scrape the insides into the batter if you like), and gradually pour the milk into the egg mixture, beating constantly until smoothly blended.  The mixture will be quite thin.

 

Pour the batter into the prepared dish, filling it ¾ full.  Arrange the diced pears evenly in the batter.  Top off with batter to fill container.

 

Bake for 50-60 minutes until puffed and golden.  Cool on a rack until lukewarm, then sprinkle on the confectioner’s sugar.
