2 cups             sugar

1 cup               unsalted butter, softened

6                      ripe bananas (about 3 cups)

4                      eggs, beaten

2-1/2 cups      flour

2 tsp                baking soda

1 tsp                salt

 

Preheat oven to 350˚.

 

Cream butter and sugar until light and fluffy.  Add bananas and eggs, beat until well mixed. 

 

Sift dry ingredients.  Blend with banana mixture.  Do not over mix.

 

Pour into 2 loaf pans buttered or sprayed with PAM.   Bake for 45 minutes to 1 hour, until firm in center and edges pull away from pans.

 

Cool on racks for 10 minutes, then remove from pans.

Recipe anecdote:    These freeze well.  This banana bread is terrific.
