4 eggs

2/3 cup sugar

vanilla (to taste) or a sachet of vanilla sugar

2/3 cup flour

1-1/4 cup milk

1lb cherries(with pits for more flavor)...or as many as will cover bottom of baking dish in one layer

3 tbsp butter

 

Beat together eggs, sugar, vanilla and a pinch of salt. Sprinkle sifted flour into the mixture. Little by little add milk then melted butter. Grease baking dish (8X10 or slightly larger....I use an oval gratin dish from France sent to me by my mother-in-law). Spread the cherries over bottom in one layer and pour in the batter. Bake for 40-45 minutes in a 350˚ oven (preheated for 15 minutes). It will puff up and then as it cools sink down. If you like you can sprinkle the cooled clafouti with powdered sugar just before serving.
