No. of servings:         2-4 (2 heavy eaters, 4 light eaters)

Recipe ingredients and directions:

 

1 egg

1 cup buttermilk

1 cup flour

1 big tsp baking powder

1 small tsp baking soda

½ tsp salt

2 tsp sugar

 

Beat up 1 egg, after removing shell.  Beat in buttermilk, shake bottle first to mix well.

Sift flour after adding baking powder, baking soda, salt and sugar.

 

Beat in the above until thoroughly mixed, but don’t beat the hell out of it.  Just gently.

 

For a larger batch, add proportionately.

Recipe anecdote:     My stepfather, Wes Ohlson, was a wonderfully kind man with a wry sense of humor.  I enjoyed these pancakes often when I visited my mother and Wes, and I have since made them for my family.  The recipe is foolproof for delicious, fluffy pancakes.
