Recipe ingredients and directions:

 

2                          Tomatoes, chopped (or 1 cup cherry tomatoes, halved)

¼ cup sliced fresh basil

1 small            garlic cove, minced

1 tbs                balsamic vinegar      

¾ tsp               salt

¼ tsp               pepper

2                      6 oz salmon fillets, skin on

¼ tsp               ground cumin

½ tsp               olive oil

 

Combine tomatoes, basil, garlic, vinegar, ½ tsp salt & 1/8 tsp pepper in a bowl.  Sprinkle salmon with cumin and remaining ¼ tsp salt and 1/8 tsp pepper.  Heat oil in non-stick skillet over medium high heat.  Add salmon, skin-side up, and cook 4 minutes.  Flip and cook 7 minutes longer.  Cover pan and reduce heat to medium.  Cook additional 3 to 4 minutes until salmon flakes easily.

 

To double or triple recipe, you can broil the salmon on foil, about 4 minutes a side.

 

Transfer salmon to serving plates.  Add tomato mixture to skillet.  Put on high heat and cook until warmed through, about 1 to 2 minutes.  Spoon over salmon.
