Recipe ingredients and directions:

 

1 lb dried Pinto beans

1-2 lb beef flank steak (or chuck)

1 large onion, chopped

1 bay leaf

salt and pepper to taste

1-2 lb can hominy

 

Soak beans overnight or cover with water and bring to boil, turn off heat, let stand 10 minutes, drain off water.  Add meat to beans, cover with fresh cold water.  Add onion, bay leaf; cover and bring to boil and then simmer for 1-2 hours until beans are soft.  At this point I remove meat, pull apart and return to pot.  Remove bay leaf, add hominy.  Season to taste.
