1 lb carrots
3 tbsp flour
2 tbsp sugar
1 tsp vanilla
3 eggs 3 tbsp butter, melted
Cook the carrots (I
microwave them when I need them quickly).
Put in food processor with
other ingredients – just remember to add the eggs slowly and blend in
processor.
Place in a soufflé dish or
dish large enough to accommodate slight rising.
Bake on 350° F for 35 to 40
minutes.
One variation: after the
baking, can place 2 tablespoons brown sugar and 3 tablespoons butter as well as
1/3 cup chopped walnuts and bake an extra 15 minutes.

kids love it. It’s great at
Thanksgiving or any day! I modify the
recipe depending on how much company we have.
Start with this recipe and double it (that’s as far as I’ve gone without
losing the soufflé).
