Recipe ingredients and directions:

 

one 2-1/2 to 3 lb ready to cook fryer, cut up, skin on

1/3 cup flour

4 tbs butter or oleo

1-1/2 cups fresh cranberries

¾ sugar

¼ cup onion, chopped

1 tsp orange peel

¾ orange juice

¼ tsp cinnamon

¼ tsp ginger

 

Coat the chicken pieces with the flour and salt .  Brown well in melted butter, turning only once.  Combine remaining ingredients in a saucepan.  Bring to a boil.  Pour mixture over chicken.  Cover and cook slowly 35-40 minutes or until tender.

Recipe anecdote:            I love to send this dish to house bound friends.  The fruited gravy is wonderful over rice. 

 

P.S.  Breasts cook rather quickly.  Watch that they do not become over-done and dry.
