½ cup butter

10 eggs

½ cup flour

1 tsp baking powder

1 can (8 oz) chopped green chiles

1 pint cottage cheese

1 lb Jack cheese, shredded

dash of salt

 

Melt butter in 13 x 9 x 2” pan.  Beat eggs lightly in a large bowl. 
Add flour, baking powder and salt.  Add melted butter, chiles, cottage cheese and Jack cheese.  Mix until blended and turn into the buttered pan.  Bake in pre-heated 400˚ oven for 15 minutes.  Reduce heat to 350˚ and bake for 35 to 40 minutes.  Cut into small squares and serve warm.

Recipe anecdote:    This recipe is from my grandmother Cleo Cross who served this recipe to her many guests at the President’s home at the University of Oklahoma.  This recipe was published in the Sooner magazine, the magazine of the University of Oklahoma in Spring 2000 as part of an article about recipes of University Women.
