3/4 lb. ground beef

1/2 cup chopped onions

1 can tomato paste

1/2 tsp salt

1/4 tsp cinnamon

1/2 c. mayonnaise

1/4 c. flour

2 cups milk

2 eggs

1/3 c. grated Parmesan Cheese

1/4 tsp nutmeg

8 oz. elbow macaroni

 

Preheat oven to 325˚.

 

Cook the 8 oz of macaroni.  Brown beef and onions.  Drain fat.  Mix the tomato paste, salt, and cinnamon together, then add it to the beef and onions. Set aside.  Begin heating the milk gently while combining the mayonnaise and flour.  Gradually stir the mayonnaise/flour mixture into the milk.  Cook and stir over medium heat until thick, being careful not to boil.  Beat the eggs, cheese and nutmeg together and gradually mix them into the hot milk sauce.  Add the cooked macaroni to the sauce.  Spoon half the macaroni mixture into a 2 quart oblong baking dish.  Cover with the meat mixture.  Top with the remaining macaroni.  Bake at 325˚ for 45 minutes or until set.

Recipe anecdote:    When I got married, a friend of my mother's gave me a bridal shower gift of a recipe box with a number of handwritten family recipes that had been passed down to her.  This is one of our favorites.  (Kids really like this, too.)
