Recipe ingredients and directions:

 

½ boned chicken breast per person

¼ slice of deli-sliced ham lunchmeat per person

Small piece of Swiss cheese per person

Mayonnaise

Crushed corn flakes for coating

 

Flatten chicken pieces and wrap each one around a piece of ham and a piece of cheese.

Fasten with a toothpick if necessary to hold chicken breast roll together.

Brush each chicken roll with mayo and then roll in cornflakes to coat it well.

Place rolls close together in an aluminum foil-lined baking pan.  Bake at 400˚ for 1 hour or until chicken is cooked through.  Serve with cheese sauce on the side.

 

Quick Cheese Sauce

1 cup mayonnaise

1 cup shredded cheese

¼ cup milk

Place mayonnaise, cheese and milk in a saucepan.

Heat slowly on medium heat until blended, stirring frequently. Serve in bowl for use at the table.
