Recipe ingredients and directions:

 

Bottom Layer

1/4 cup confectioner’s sugar

1 cup flour

½ cup butter

 

Filling

2 tbs lemon juice

Rind of 1 lemon, grated or zested

1 cup sugar

2 tbs flour

½ tsp baking powder

2 eggs

 

Frosting

3/4 cup confectioner’s sugar

½ tsp vanilla

1 tbs butter

1-½ tsp milk

 

Mix together confectioner’s sugar, flour and butter for the bottom layer. 

Pat into an 8 or 9 inch square pan. Bake 15 minutes at 350˚ F; cool.

Mix together lemon juice, lemon rind, sugar, flour, baking powder, and eggs, for the filling.

Place on baked crust, return to 350˚ oven; bake 25 minutes; cool.

Mix confectioner’s sugar, vanilla, butter and milk well for the frosting.  Frost and cut into bars.
