Recipe ingredients and directions:

 

1 cup               light brown sugar

½ cup              butter

2                      eggs

3                      very ripe bananas (5 if a double batch)

1-1/2 cups      flour

1/3 cup           cocoa

½ tsp               baking powder

pinch               salt

 

Cream together the sugar and butter.  Add eggs.  Add the bananas in pieces and blend until incorporated.  Sift together the remaining ingredients.  Add slowly and mix only until flour is completely incorporated.

 

Bake in a preheated 325˚ oven in a loaf pan lined with wax or parchment paper for 45-60 minutes (double batch will take closer to 60 minutes) until done.

 

Variations:  Increase flour to 1-3/4 cups and omit cocoa for regular banana bread.  If you have some in your house who likes walnuts and others who don’t, put the nuts on the top of the bread.  Picky eaters can pick them off.

 

Recipe source:       I substantially modified my Mom’s recipe for banana bread.  She got the original from a college friend about 40 years ago.  Nick is at FAIS in first grade this year.  Catie will start preschool this September.  This Is Nick’s favorite.
