3 cups white sugar
½ cup water
1 cup white Karo syrup
3 cups raw peanuts
1 tsp salt
1 tbs butter
2 tsp baking soda
Before getting started you
need to have a large clean work area to pour the peanut brittle mixture when it
is ready to pull. I find that a large
marble board works very well.
Lightly spread butter on the
counter or marble board.
Cook sugar, Karo syrup and
water in a large frying pan until you can spin a thread. Add peanuts, stirring constantly until the
candy mixture turns golden brown.
Remove the pan from the heat.
Add salt, butter and baking soda; stir and pour mixture onto the counter
or marble board and pull the peanut brittle so that it is thin and airy.

It is important that the baking soda is fresh, and I always open a new box to
make the peanut brittle. I make peanut
brittle with my mother-in-law every year around the holidays, and it has become
a tradition for us to make peanut brittle together.
