4 cups cooked rice, long
grain (best if cooked over night)
2 tbs oil
½ lb Chinese BBQ pork, diced
½ lb ham, diced
2 eggs
1 cup frozen petite peas
1 cup snow peas
salt and pepper to taste
soy sauce
Scramble the eggs and set
aside.
Season the rice with salt
and pepper. In a large frying pan or
wok heat the oil and fry the rice gently over medium heat until all the oil has
been absorbed. Add BBQ pork, ham,
eggs, peas and snow peas; and stir and cook until all the ingredients are
evenly distributed. Salt and pepper to
taste; then add soy sauce and stir until the color is lightly brown.

Recipe anecdote: This
recipe can be adapted to any taste, just substitute your favorite meat
(chicken, pork, beef or shrimp) and vegetables or tofu. The BBQ pork and ham are already cooked so
they just need to be heated; however, if you use chicken, pork, beef or shrimp,
be sure to cook and season the ingredients before adding to the rice.
