Recipe ingredients and directions:

 

Crust:  1-1/2 cups graham cracker crumbs

            2 tbs sugar

            1 tbs brown sugar

            ½ stick margarine/butter, melted

 

Mix together and put in the bottom of a greased spring form pan.

 

Cake:  3 - 8 oz packages cream cheese

            4 or 5 eggs, depending on size

            1-1/2 cups sugar

            1 cup heavy whipping cream

            1 tsp lemon rind

            ½ tsp vanilla

            4 – 6 oz baking/semi-sweet chocolate

 

Melt chocolate in double boiler slowly – Do not burn. 

Mix softened cream cheese with sugar, small amounts at a time.

Beat in eggs, one at a time.

Add rest of ingredients.

Pour into pan.  Bake at 325° for one hour.  Turn off oven, leave cake in oven for 1 additional hour.

Take out cake and cool.

Refrigerate.

 

May need to adjust baking temperature and time to altitude.
