Recipe ingredients and directions:

 

1 package                  frozen chopped spinach

15 oz                           package ricotta cheese

1 cup                           parmesan cheese, shredded

1                                  egg

                                    salt and pepper

15 oz                           jar spaghetti sauce

1 package                  lasagne noodles

8 oz                             mozzarella cheese, shredded

1 cup                           water

 

Thaw spinach in colander and squeeze out all extra water.  Combine spinach, ricotta, ˝ cup parmesan cheese, egg, salt and pepper.  Evenly spread ˝ cup spaghetti sauce in greased pan.  Arrange 4 uncooked lasagna noodles.  Sprinkle with half of mozzarella cheese.  Spread 1-1/2 cup spaghetti sauce.  Repeat layering, ending with sauce.  Sprinkle evenly with ˝ cup parmesan cheese.  Run knife around edge of pan.  Spoon water around edges carefully.  Cover tightly with foil.  Bake at 375˚ for 1-1/4 hours.  Let stand 15 minutes before cutting.  Serve!

Recipe anecdote:   Use regular lasagne noodles-but the recipe doesn’t require any pre-cooking of the noodles.  Easy!
