Brown in a little oil:
4 pork loin chops, ¾” thick
Set aside.
Brown and drain on paper
towels:
3 slices bacon, thinly
sliced
Make sauce, blending all
ingredients well:
4 tbs soy sauce
6 tbs fresh lemon juice
4 tbs honey
2-3 tsp chili powder
1-1/2 tsp curry powder
Remove excess bacon oil from
pan. Add and sauté over low heat til
soft:
1 cup finely chopped onion
2 cloves minced garlic
Add bacon, chops and
sauce. Simmer 5 minutes. Add about ½ cup water. Simmer over low heat 20-30 minutes.
Excellent served with mashed
potatoes, followed by a fresh green salad.

Recipe anecdote: The Checkerboard name comes from the strips of bacon
actually. I had the recipe from God
know where, with no name on it. When I
looked down at my dish one day, my bacon strips were mysteriously lined up in a
checkerboard fashion…hence the name.
