Recipe ingredients and directions:

 

2 cups couscous, uncooked

1-1/4 lb tomatoes, diced (seeded, optional)

1-1/4 lb cucumbers, seeded and diced

1 medium yellow or white onion

juice of 2 small lemons

¼ cup olive oil

2 tsp salt

1 tsp pepper

1 bunch parsley, stems removed and chopped

6 large fresh mint leaves, chopped

¼ cup raisins, soaked in ¼ cup boiling water

chives, optional

 

Puree tomatoes, cucumbers and onions in a food processor or blender until smooth and liquid.  Place in a large bowl and add olive oil, salt and pepper, chopped herbs, lemon juice, and raisins.  Mix well.  Add the 2 cups of uncooked couscous and mix well.  Cover with saran wrap and let sit overnight in refrigerator.  Serve cold.
