Recipe ingredients and directions:

 

2 cups fresh organic basil leaves

5 cloves garlic

1 cup walnuts or pinenuts

1 cup olive oil

1 cup parmesan cheese, grated

¼ cup Romano cheese, grated

black pepper to taste

 

Combine basil, garlic and pinenuts in the bowl of food processor.

Leave motor running and add the olive oil slowly.

Turn motor off and add cheeses and black pepper.

Process briefly.

Recipe anecdote:   We like to use lots of garlic.  We think pesto freezes well.  We toast pinenuts before using in 350° F oven for 10-15 minutes.
